I have a weak spot for progressive music made from Spain. Within the European context, the music seemed to draw frequently from other countries, but also with their unique input, ranging from Flamenco to Basque folk. They also had a 'golden era' ('75-'79) that was much later than most of their European counterparts.
Some of my favorites:
Los Canarios - Known mostly for their ambitious double album "Ciclos", which draws on the music of Vivaldi's Four Seasons. For me, it's one of the best fusions of classical music interpreted for rock. It's pompous, but I like it that way.
Cai - These guys are like the Spanish Le Orme. The first two albums are both classics imo, with many high spots. Accessible. First album was issued a few years ago with a bonus disc.
Goma - Only one album to their credit as a group, but it's one of my favorites. It's all over the map, jazz, rock, Flamenco, frenetic, dynamic. A lost classic for me.
Companyia Electrica Dharma - I can't say I dig most of the catalog I've heard, but I really love Diumenge, which belongs right smack dab in that "forgotten jazz-rock" album thread.
Gotic - Known for their single album "Escenes", well described as a "more jazzy Snow Goose". Anyone who like Snow Goose that has never heard this, should jump on it.
Jordi Sabatés - Ocells del Mes Enlla. The title track sounds like it should be something off of Jan Akkerman's Profile, Finch, or such. Sabates' catalog in general is hit or miss, but the hits are great.
Feliu + Joan Albert - Much lesser known (from what I recall) until its CD issue. Great record, mostly atmospheric but this track rocks:
